Vietnamese drip coffee — Cà Phê Phin — is brewed through a small stainless steel filter called a phin. Ground Vietnamese robusta is packed into the filter, hot water is poured over the top, and the coffee drips slowly into a glass below. The process takes 4 to 6 minutes and produces a concentrated, full-bodied brew unlike anything from a drip machine or espresso bar.
The most popular way to drink it is Cà Phê Sữa Đá — phin-brewed robusta poured over sweetened condensed milk and ice. The condensed milk melts slowly into the coffee, creating a layered drink that is simultaneously bitter, sweet, and deeply refreshing.
At our Rupert Street café in the Renfrew–Collingwood neighbourhood, the phin is the centrepiece of the bar. Every cup is brewed to order — no batch brewing, no shortcuts. The same applies at our Richmond and Mount Pleasant locations.

We use robusta beans from the Central Highlands of Vietnam — bold, full-bodied, and higher in caffeine than arabica. The flavour holds up beautifully under condensed milk and ice.
Less sweet, no ice, oat milk instead of condensed milk — we adjust every phin to your preference. Just ask.
Our Rupert Street café in Renfrew–Collingwood is the closest phin drip coffee to Rupert SkyTrain Station. We also serve at Richmond (Bridgeport Road) and Mount Pleasant (East Broadway).
