Try It at Hanoi DripVietnamese coffee is one of the world's great coffee traditions — and one of the least understood outside of Southeast Asia. It's built on three pillars: robusta beans, the phin filter, and a culture of slow, intentional brewing.
Vietnam is the world's second-largest coffee producer and the largest producer of robusta beans. The country's Central Highlands — particularly the provinces of Dak Lak, Lam Dong, and Gia Lai — produce most of the world's robusta supply. These beans have a bolder, earthier flavour than arabica and roughly double the caffeine content.
The phin filter, introduced in the French colonial era, is the traditional Vietnamese brewing method. It's a small metal filter that sits on top of your cup and brews coffee by gravity over 4–5 minutes. The result is a concentrated, full-bodied cup that's meant to be savoured — not rushed.

**Ca Phe Trung** (Egg Coffee): A Hanoi specialty — whipped egg yolk and condensed milk foam over phin coffee. Rich, custard-like, and unlike anything else.
**Ca Phe Muoi** (Salted Cream Coffee): A Hue specialty — salted whipped cream over iced phin coffee. The salt amplifies the sweetness and softens the bitterness.
**Ca Phe Dua** (Coconut Coffee): Phin coffee blended with coconut milk. Tropical, creamy, and dairy-free.
