Ube — purple yam — has been a staple of Filipino desserts for generations. Its natural colour and mild, vanilla-like sweetness make it one of the most visually striking and flavourful ingredients in the café world. At Hanoi Drip, we pair it with coconut milk and our signature Vietnamese robusta to create a drink that is bold, creamy, and completely dairy-free.
The result is a layered iced latte: deep purple ube at the base, swirling white coconut milk in the middle, and a shot of concentrated robusta on top. Stir it together or drink it in layers — either way, it is one of the most photographed drinks on our menu.

The ube and coconut are sweet and creamy, so we use a bold robusta shot to balance them. The result is a drink with real coffee depth, not just a sweet dessert.
Ask for less ube syrup for a more subtle flavour, or extra syrup if you want it sweeter. We adjust to your preference.
