Find a LocationThe phin filter is the heart of Vietnamese coffee culture. It's a simple, elegant device — a small metal filter that sits on top of your cup, brews a concentrated shot of coffee through gravity over 4–5 minutes, and produces a cup that's unlike anything from an espresso machine or a drip brewer.
Phin coffee is made with robusta beans, which are native to Vietnam's Central Highlands and have been cultivated there for over a century. Robusta has a bolder, earthier flavour than arabica, with roughly double the caffeine. The slow phin brew extracts this flavour fully, producing a concentrated, complex cup.
At Hanoi Drip, every drink starts with phin-brewed robusta. Whether you're drinking it black, with sweetened condensed milk (Ca Phe Sua Da), with egg cream (Ca Phe Trung), or with salted cream (Ca Phe Muoi), the phin is the foundation.
4–5 minutes of gravity drip extracts a fuller, more complex flavour profile than a 25-second espresso shot.
Vietnamese robusta has roughly double the caffeine of arabica. Phin coffee is not for the faint of heart.
The phin filter has been used in Vietnam since French colonists introduced coffee in the 19th century. It's the most Vietnamese way to brew coffee.
Vancouver's coffee scene has long been dominated by espresso-based drinks. But Vietnamese phin coffee is finding its audience — among Vietnamese diaspora communities who grew up with it, and among coffee enthusiasts looking for something genuinely different.
Hanoi Drip opened on Rupert Street in East Vancouver to serve both communities. We brew every cup to order through the traditional phin filter, using robusta beans sourced directly from family farms in Vietnam's Central Highlands.
