Try It at Hanoi DripVietnamese coffee with oat milk is a dairy-free adaptation of Ca Phe Sua Da — the classic Vietnamese iced coffee with sweetened condensed milk. It uses oat milk (or oat milk condensed milk) in place of dairy condensed milk, producing a drink that's creamy, naturally sweet, and surprisingly close to the original.
Oat milk has become the most popular plant-based milk for coffee drinks globally, and it works particularly well with Vietnamese robusta. Its neutral flavour and natural sweetness don't compete with the bold coffee, and barista-style oat milk froths well for hot drinks.
This recipe uses oat milk condensed milk for the most authentic sweetness and richness. If you can't find oat milk condensed milk, you can substitute regular oat milk sweetened with 2–3 teaspoons of maple syrup or coconut sugar.
Ingredients (1 serving): 20g Vietnamese robusta coffee (medium-coarse grind) · 80ml hot water · 3 tablespoons oat milk condensed milk (or 80ml oat milk + 2 tsp maple syrup) · Ice
Step 1 — Brew the phin: Set up your phin filter on a glass. Add 20g of ground robusta, place the gravity press, bloom with 30ml of water for 30 seconds, then add the remaining 50ml. Wait 4–5 minutes.
Step 2 — Add the oat milk condensed milk: Add 3 tablespoons of oat milk condensed milk to a tall glass.
Step 3 — Add ice: Fill the glass with ice.
Step 4 — Pour the coffee: Pour the brewed phin coffee over the ice and condensed milk. Stir well to combine.
For a hot version: Add the oat milk condensed milk to a mug, pour in the hot phin coffee, and stir. For extra creaminess, top with frothed oat milk.
