The result is a rich, tropical, deeply satisfying coffee that has become one of the most popular Vietnamese coffee variations internationally.
The drink is typically served iced — the contrast between the bold, bitter robusta and the sweet, creamy coconut is at its best when cold. Some versions blend the coconut cream into a frothy topping; others layer it over the coffee for a striking visual effect.
Ingredients (1 serving): 20g Vietnamese robusta coffee (medium-coarse grind) · 80ml hot water · 3 tablespoons sweetened condensed milk · 3 tablespoons full-fat coconut cream · Ice · Optional: toasted coconut flakes for garnish
Step 1 — Brew the phin: Set up your phin filter on a glass. Add 20g of ground robusta, place the gravity press, bloom with 30ml of water for 30 seconds, then add the remaining 50ml. Wait 4–5 minutes.
Step 2 — Prepare the coconut cream: In a small bowl, whisk together 3 tablespoons of coconut cream and 1 tablespoon of condensed milk until smooth and slightly aerated.
Step 3 — Assemble: Add 2 tablespoons of condensed milk to a tall glass. Fill with ice. Pour the brewed phin coffee over the ice.
Step 4 — Add the coconut cream: Gently pour the coconut cream mixture on top over the back of a spoon to create a distinct layer. Garnish with toasted coconut flakes if desired.
Step 5 — Serve: Stir before drinking to combine all the layers, or sip through the coconut cream layer for a layered flavour experience.
Blended version: For a smoother drink, blend the brewed coffee, condensed milk, coconut cream, and ice together until smooth. This produces a thick, frothy drink similar to a Vietnamese coffee frappe.
Coconut cream has a natural sweetness that complements the bitterness of robusta without overpowering it. The result is a balanced drink that doesn't need as much added sugar.
Full-fat coconut cream adds a silky richness that makes the coffee feel indulgent and satisfying. It's creamier than dairy milk and has a more distinctive flavour.
