- Cà Phê Trứng (Egg Coffee): A Hanoi specialty! We whip egg yolks with condensed milk until it forms a thick, meringue-like foam, which is then spooned over hot black coffee. It's like drinking a liquid tiramisu.

The Phin Filter Experience
What makes Vietnamese coffee so special? It all comes down to the beans and the brew method. We use Robusta beans, which are bolder, nuttier, and pack nearly twice the caffeine of the Arabica beans used in most Western coffee shops. These beans are perfectly suited for the phin filter.
The phin is a small metal cup that sits on top of your glass. Hot water is poured over the grounds, and the coffee slowly drips down over the course of 4 to 6 minutes.
